Paringa Estate The Paringa Pinot Noir is handpicked from the winery's oldest blocks Pinot Noir, planted in 1985 at Red Hill on the Mornington Peninsula.
Part of The Paringa Selection, this wine aims to be a pure expression of its site. If the quality of the vintage does not justify it, it is not made and the fruit goes to the Estate series.
The fruit is destemmed, cold soaked and inoculated. The wine ferments in a single French oak foudre, or vat, with gentle plunging. For maturation it spends 12 months on lees in 40% new French oak barrels.
Deep purple red, Paringa Estate The Paringa Pinot Noir has texture, finesse and enormous persistence, its fine tannins wrap around a dark fruit core.
It is the pinnacle of Paringa Pinot Noir. Cellaring potential is eight years.
